Every Monday, I look forward to doing my groceries – alone. I find bliss going around each and every aisle in a pace I want and checks out all the goods on display which is not a really good idea by the way as I end up buying stuff I don’t really need. Anyway, while waiting for the supermarket to open at 8:30am, I eat breakfast first in the nearby restos or cafes while reading the local papers or surfing the net if there’s wifi available. That’s how I get updated with the news and what-nots as I really don’t get to watch television anymore. I also make sure to check and reply to all my emails and last week I got to clean and organize my inbox with the free time. Goodness, I have over 1000+ emails and only a few were legit including the Outer Banks foreclosures notice which I think is such a good investment if only I had the moohlah to spare but I don’t.
Back to what I was saying, last week I tried the Chicken Ala King of French Baker while at South Supermarket and didn’t really like it. I like the version of the dish I saw online better.
1/4 c. butter
1/3 c. flour
1/2 tsp. salt
1 c. chicken broth
1 c. milk
2 c. chicken, diced
1 (3 oz.) can mushrooms
1/4 c. pimento, chopped
1 (16 oz.) bag frozen peas
In a saucepan, melt 1/4 cup butter (or substitute chicken fat). Blend in 1/3 cup flour in 1/2 teaspoon salt. Add 1 cup chicken broth and 1 cup milk all at once. Cook, (stir constantly until sauce is thick and bubbly). Add 2 cups diced and cooked chicken, drained mushrooms and chopped pimento. Stir in above ingredients and add cooked peas. Heat thoroughly and serve over noodles or toast. Enjoy.
